- 1 c. cornmeal
- 1/3 c. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1/3 c. olive oil
- 2/3 c. milk
- 1 egg
- 1 c. corn (fresh, canned or frozen, thawed)
Directions

1Combine the dry ingredients in a large bowl.

2Combine the liquid ingredients in another bowl.

3Add the liquid ingredients to the dry ingredients.

4Add the corn.

5Stir just until blended. Spoon batter into paper lined muffin cups.

6Bake at 400° for 20 minutes.

7Yields 12 muffins.
