- 1 stick butter or margarine
- 1/2 c. sugar
- 1 c. plain cornmeal
- 1 c. plain flour
- 1 can cream-style corn
- 4 eggs
- 3 Tbsp. baking powder
- 3/4 tsp. salt
- 4 oz. grated Cheddar cheese
- 4 oz. grated Monterey Jack cheese
- 1/4 lb. diced, cooked and drained bacon
Directions

1Beat margarine and sugar until fluffy.

2Add eggs one at a time. Beat well.

3Add other ingredients.

4Beat well. Pour into greased muffin pan, 1/2 full each.

5Bake at 400° until just golden brown.

6Makes 2 dozen.
