Ingredients

  • 1 stick butter or margarine
  • 1/2 c. sugar
  • 1 c. plain cornmeal
  • 1 c. plain flour
  • 1 can cream-style corn
  • 4 eggs
  • 3 Tbsp. baking powder
  • 3/4 tsp. salt
  • 4 oz. grated Cheddar cheese
  • 4 oz. grated Monterey Jack cheese
  • 1/4 lb. diced, cooked and drained bacon

Directions

    Beat margarine and sugar until fluffy.

    Add eggs one at a time. Beat well.

    Add other ingredients.

    Beat well. Pour into greased muffin pan, 1/2 full each.

    Bake at 400° until just golden brown.
