- 2 whole Eggs
- 1 cup Buttermilk
- 1/4 cups Canola Oil
- 1/4 cups Honey
- 1/4 cups Granulated Sugar
- 1 cup Cornmeal
- 1-1/2 cup All-purpose Flour
- 1 teaspoon Salt
- 2-1/2 teaspoons Baking Powder
Directions

1Preheat the oven to 350°F.

2In a large bowl combine the eggs, buttermilk, oil, honey and sugar. Whisk in the cornmeal, flour, salt and baking powder. Pour the batter evenly into a greased jumbo muffin pan (my pan makes 6 muffins).

3Bake for 45 minutes or until a cake tester inserted in the center comes out cleanly. Enjoy!
