- 2/3 c. all-purpose flour
- 3/4 tsp. baking powder
- 1/2 tsp. salt
- 1/3 c. low-fat milk (1%)
- 1 egg
- 2 c. corn kernels
- about 3 Tbsp. vegetable oil
Directions

1Combine flour, baking powder, salt, milk and egg in blender or food processor.

2Whirl just until smooth.

3Transfer to bowl.

4Stir in corn.

5Pour 1 tablespoon of the oil into large nonstick skillet. Heat skillet over medium heat.

6Drop rounded tablespoons of batter into skillet.

7Cook until golden and crisp on bottom, 2 to 3 minutes.

8Turn over to brown other side.

9Keep warm.

10Repeat with remaining batter and oil.
