Ingredients
- 5 beets (beetroot)
- 6 sweet potatoes
- 4 medium sweet peppers of varying colour
- 2 sprigs parsley
- 4 stick carrots
- 1 stick kale
- 1 tsp salt
- 1 tsp ground black pepper
- 1 can sweet corn (i used Green giant)
- 1 can cream style corn
- 1 box evaporated milk
- 3 tbsp soft table margarine/butter (low fat)
- 1/2 cup crumbled feta cheese
- 2 cup grated cheddar cheese
Directions

1Bring sweet potatoes and beets to a boil.

2Slice sweet peppers lengthways.

3Finely chop parsley.

4Grate carrots and put aside in a bowl.

5Cut beets into squares of medium to small sizes but not large.

6Crush sweet potatoes and place both in a large bowl.

7Chop up kale as finely as you can.

8Ensure not to add the stalk.

9Mix all dry ingredients in a bowl adding the salt and black pepper to taste.

10Add sweet corn and cream style corn to bowl and mix.

11In greased dish add approximately half of mixture.

12Then add a layer of cheddar cheese and add all of the feta cheese.

13Add remainder of mixture and layer top with cheddar cheese.

14Bake at 190C for 30-45minutes.
