- 2 1/4 c. cornmeal
- 1 tsp. salt
- 4 Tbsp. lard
- 2/3 tsp. baking soda
- 3/4 c. boiling water
- 1/2 c. buttermilk
Directions

1Sift cornmeal with soda and salt.

2Work the lard into the dry ingredients and blend well.

3Add the boiling water and continue blending.

4Slowly add the buttermilk until a soft dough is formed. The buttermilk should be added very slowly to ensure the dough contains enough consistency to be molded into small cakes.

5Grease a skillet, heat it and place the cake in the skillet.

6Flatten and bake them in a preheated oven at 350° for 30 to 40 minutes, until lightly brown and done.
