- 2 c. cut, uncooked corn
- 1/2 c. grated Cheddar cheese
- 3 eggs plus 1 extra white of egg
- 1/4 c. butter, melted
- 1/2 c. cream
- 1 tsp. sugar
- 1/2 tsp. salt
- 2 jalapeno peppers, seeded and chopped fine
- pinch of cayenne
Directions

1Toss corn and cheese in bowl.

2Separate eggs and set whites aside.

3Whisk together yolks, butter, cream, sugar, salt, pepper and cayenne.

4Stir in jalapenos.

5Pour over corn and cheese, blending well.

6Whisk egg whites to form soft peaks.

7Fold into corn mixture.

8Transfer to buttered baking dish and bake at 325° for 1 hour or until surface is brown and center is set.

9Let sit 10 minutes before serving.
