Ingredients

  • 20 ears corn, yellow or white (around 10 c.)
  • 1 c. chopped sweet green pepper (some sweet red pepper for color)
  • 1 c. chopped onion
  • 1 c. chopped celery
  • 1 Tbsp. salt
  • 1 1/2 c. sugar
  • 2 Tbsp. mustard seed
  • 1 tsp. celery seed
  • 1/2 tsp. turmeric
  • 2 1/2 c. white vinegar
  • 2 c. water

    Put corn in boiling water; boil 3 minutes and dip in cold water.

    Cut off cob, combine corn with all ingredients and boil 15 minutes.

    Pack into jars.

    Process in boiling water bath 15 minutes.
