Ingredients

  • 20 ears corn
  • 1 c. chopped green pepper
  • 1 c. chopped sweet red pepper
  • 1 c. chopped onion
  • 1 c. chopped celery
  • 1 Tbsp. salt
  • 1 1/2 c. sugar
  • 2 1/2 Tbsp. mustard seed
  • 1 tsp. celery seed
  • 1/2 tsp. turmeric
  • 2 1/2 c. white vinegar
  • 2 c. water

    Drop ears of corn in boiling water.

    Boil 5 minutes.

    Dip in cold water.

    Cut from cob; measure, there should be 10 cups. Combine corn with remaining ingredients and boil 15 minutes.

    Pack into sterilized Kerr jars to within 1/2-inch of top.

    Put on cap, screw band firmly tight.

    Process in boiling water bath 15 minutes.

    Yields 5 to 6 pints.
