Ingredients

  • 8 c. corn kernels (14 ears)
  • 4 c. chopped celery
  • 2 c. diced green peppers
  • 1 c. diced onions
  • 1 1/2 c. sugar
  • 1 tsp. celery seed
  • 1/4 c. flour
  • 2 c. diced sweet red peppers
  • 4 c. vinegar
  • 2 Tbsp. salt
  • 3 Tbsp. dry mustard
  • 1/2 c. water

    Boil corn-on-the-cob 10 minutes. Cut off and measure 8 cups. Mix celery, peppers, onions, sugar, corn, vinegar, salt and celery seed. Boil 15 minutes. Combine mustard, flour and water.

    Mix all ingredients. Boil 5 minutes.

    Pour into sterilized jars.

    Seal at once.

    Makes 4 to 5 pints.
