Corn-Rice Casserole

  • 2 c. cooked rice
  • 1/2 stick butter
  • 10 oz. pkg. Cheddar cheese, grated
  • milk as needed
  • 1 (No. 2) can whole kernel corn, drained
  • 1 1/2 tsp. salt
  • 1 large green pepper, grated
  • pepper to taste

Directions

    Cook rice as directed on box and add salt and butter.

    While still hot, grate in the pepper (don't get into the skin).

    Add grated cheese and pepper.

    Pour in milk to right consistency (not soupy).

    Fold in corn.
