- 2 c. cooked rice
- 1/2 stick butter
- 10 oz. pkg. Cheddar cheese, grated
- milk as needed
- 1 (No. 2) can whole kernel corn, drained
- 1 1/2 tsp. salt
- 1 large green pepper, grated
- pepper to taste
Directions

1Cook rice as directed on box and add salt and butter.

2While still hot, grate in the pepper (don't get into the skin).

3Add grated cheese and pepper.

4Pour in milk to right consistency (not soupy).

5Fold in corn.
