- 4 cups fresh or frozen whole-kernel corn
- 1 cup chopped green bell pepper
- 1/2 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup balsamic vinegar
- 4 teaspoons honey mustard
- 2 teaspoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Directions

1Cook corn in boiling water 1 minute; drain. Combine corn, bell pepper, onion, and parsley in a large bowl.

2Combine vinegar and remaining 4 ingredients in a jar; cover tightly, and shake vigorously. Pour over corn mixture, and toss gently. Cover and chill 1 hour.
