Corn Salsa

Ingredients

  • 2 ears Corn
  • 3 whole Tomatoes (small)
  • 18 cups Yellow Onion, Chopped
  • 2 whole Hot Peppers (minced)
  • 4 dashes Salt
  • 4 dashes Pepper
  • 1/2 whole Lemon, Squeezed
  • 1/2 whole Lime Squeezed

Directions

    Boil the corn until done.

    Chop tomatoes, onion and hot pepper and add to a serving dish.

    (Note regarding the hot pepper: I started with two, then tasted it and added 1/2 of another.

    Add them to taste, some are much hotter than others.)

    Once corn is done and cooled, cut off of the cob and add to the serving dish.

    Mix ingredients.

    Add salt and pepper to taste.

    Add lemon and lime juice to taste.

    Mix and serve.

    Can be used as a salsa or relish.
