- 1 each small poblano chile pepper, seeded and minced
- 3 tsp olive oil
- 1/2 tsp salt
- 1 cup corn (fresh or frozen)
- 1 each small jalapeno pepper seeded and minced
- 2 tbsp chopped fresh cilantro
- 2 tbsp red onion chopped
- 2 tbsp lime juice
- 1/2 tsp sugar
Directions

1Brush poblano pepper with olive oil and grill skin-side down until charred but still firm, about 5 minutes.

2Cool and minced

3If using fresh corn, boil a small pot of water to boil.

4Add corn and boil until tender.
