Corn Scallop

Ingredients

  • 1 (16 oz.) can whole kernel corn
  • 1 (16 oz.) can cream-style corn
  • 2 eggs
  • 1 small can evaporated milk (2/3 c.)
  • 4 Tbsp. or 1/4 stick melted butter or margarine
  • 2 tsp. instant minced onion
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 c. coarsely crushed soda crackers
  • 1 (12 oz.) pkg. diced Swiss cheese

Directions

    Drain liquid from whole kernel corn into a cup.

    Save 1/4 cup of liquid.

    Beat eggs lightly in large bowl.

    Stir in 1/4 cup of liquid and other ingredients.

    Spoon into 8-cup baking dish.

    Bake at 325° for 1 hour or until set.

    Let stand 5 minutes before serving.

    It can be made with Jack cheese or Mozzarella but Swiss is better.
