- 1 tablespoon butter
- 14 cup parmesan cheese
- 6 slices bacon
- 10 ounces corn, canned, drained
- 14 cup butter
- 14 cup flour
- 14 teaspoon salt
- 18 teaspoon pepper
- 1 cup milk
- 1 cup cheddar cheese, shredded
- 4 eggs, separated
- 14 teaspoon cream of tartar
Directions

1Preheat oven to 350 degrees.

2Butter 1 1/2 quart souffle dish (or oven baking dish) with 1 tablespoon butter.

3Sprinkle with Parmesan cheese to coat sides and bottom.

4Cook bacon until crisp, then crumble.

5Melt 1/4 cup butter in saucepan.

6Blend in flour, salt and pepper.

7Gradually stir in milk.

8Bring to a boil and cook 1 minute, stirring constantly.

9Stir in cheese, and remove from heat.

10Stir in egg yolks, 1 at a time, until smooth.

11Stir in bacon and corn.

12Beat egg whites with cream of tartar in large bowl until peaks form.

13Stir 1/4 of whites into mixture to lighten.

14Gently fold into remaining whites.

15Pour into the prepared dish.

16Bake at 350 degrees for 40 to 45 minutes.
