Ingredients
- 1 c. chopped sweet red pepper
- 1 c. chopped onion
- 1 Tbsp. corn oil
- 1 Tbsp. margarine
- 2 tsp. flour
- 2 c. milk
- 3 c. fresh or 1 (16 oz.) pkg. frozen corn
- 1 c. light cream or half and half
Directions

1Cook pepper and onion in oil and margarine until tender.

2Stir in the flour.

3Stir over low heat for a few minutes.

4Add milk slowly and stir frequently to avoid lumping.

5Set aside.

6Place 1 cup corn and cream in blender.

7Blend until somewhat smooth.

8Add corn and cream mixture and remaining corn to the milk mixture. Salt and pepper to taste.

9Simmer slowly until thoroughly heated. May be garnished with parsley.
