Corn Squash Casserole

Ingredients

  • 2 c. yellow summer squash
  • 1/2 c. water
  • 1 egg
  • 1 can cream-style corn
  • 2/3 c. milk
  • 1/2 c. cracker crumbs
  • 2 Tbsp. sugar
  • 1/2 tsp. seasoning salt
  • 2 tsp. butter
  • salt and pepper to taste

Directions

    Wash and slice squash; cook in 1/2 cup water on medium heat until tender.

    Beat egg and add milk; spread about 1/3 cup corn in bottom of greased casserole dish.

    Add layer of 1/3 of squash. Sprinkle on part of crumbs, season and add few dots of butter and few spoons of egg mixture.

    Repeat layers until all ingredients are used.

    Pour remaining liquid over all.

    Bake at 375° for about 30 minutes.

    You can add onions and Cheddar cheese also.
