  • 3/4 c. flour
  • 2 1/2 tsp. baking powder
  • 1 Tbsp. sugar
  • 1/2 tsp. salt
  • 1 1/4 c. cornmeal
  • 1 egg, slightly beaten
  • 2 Tbsp. melted butter
  • 1 c. buttermilk

    Grease muffin tins. Place in oven to heat. Sift dry ingredients together. Add egg, butter and buttermilk. Pour into hot muffin tins. Bake at 425° for 20 to 25 minutes.
