- 1 1/2 cups corn, frozen, thawed, can also use fresh
- 1 1/2 cups grape tomatoes, halved
- 1/2 lb mozzarella cheese, cubed
- 1 avocado, diced
- 1/2 cup cilantro
- 1/4 cup olive oil
- 1 tablespoon lemon juice
- salt and pepper
Directions

1In blender combine cilantro, olive oil, lemon juice, salt, and pepper till smoth.

2In bowl combine corn, tomatoes, mozzarell, avocado, cilantro dressing and toss lightly.

3Refrigerate 15 minutes to 3 hours.
