- 6 ears corn or 2 pkg. frozen corn
- 1 medium onion, chopped
- 1/2 c. thinly sliced celery
- 1 clove garlic, finely chopped
- 2 Tbsp. butter
- 1 tsp. basil
- 1/2 tsp. salt
- 1 (2 oz.) jar diced pimentos, drained
Directions

1Prepare corn as needed. Cut enough kernels from corn to measure 3 cups. Cook and stir corn, onion, celery and garlic in butter in a 3-quart saucepan over medium heat until onion is tender, about 10 minutes. Stir in remaining ingredients.

2Reduce heat.

3Cover and cook until corn is tender, 3 to 5 minutes. Yields 8 servings. Has 95 calories per serving.
