- 2 Tbsp. shortening
- 1/4 c. sugar
- 1 egg yolk, beaten
- 3/4 c. cornmeal
- 3/4 c. flour
- 1/2 tsp. soda
- 2 tsp. baking powder
- 3/4 tsp. salt
- 3/4 c. sour milk
- 1 egg white
Directions

1Preheat oven to 425°.

2Using a No. 9 cast-iron skillet, melt 1 tablespoon shortening as oven heats.

3Cream remaining 1 tablespoon shortening; add sugar.

4Cream until light and fluffy.

5Add beaten egg yolk.

6Sift cornmeal, flour, soda, baking powder and salt together and add to egg mixture alternately with sour milk.

7Last fold in egg white beaten stiff.

8Turn into hot cast-iron skillet and bake for 20 minutes, or until inserted toothpick comes out clean.
