  • 4 eggs
  • 1/2 c. shredded Monterey Jack cheese
  • 1 c. sugar
  • 2 sticks butter
  • 1 (6 oz.) can cream corn
  • 4 tsp. baking powder
  • 1/2 c. shredded Cheddar cheese
  • 1 c. flour
  • 1 c. cornmeal
  • 1 tsp. salt

Directions

    Heat oven to 350°.

    Mix flour, cornmeal, salt and baking powder.

    Cream together eggs, sugar and butter; add cream corn. Add dry ingredients.

    Blend in cheeses last.

    Reduce heat to 300°. Bake 40 to 50 minutes.
