  • 1/2 c. sugar
  • 2 eggs, beaten
  • 2 c. all-purpose flour
  • 1 c. yellow cornmeal
  • 1 Tbsp. baking powder
  • 3/4 tsp. salt
  • 2 1/2 Tbsp. melted butter
  • 1 1/2 c. milk
  • 2 to 3 Tbsp. canola oil (for greasing baking pan)

    Preheat oven to 350°. In a bowl, mix sugar and eggs. Combine flour, meal, baking powder and salt. Add to the egg mixture; stir in melted butter and milk. Bake in a greased 9 x 13 baking pan for 30 minutes, until golden brown.
