- 1 c. cornmeal
- 1/2 tsp. salt
- 1/2 c. sugar
- 4 tsp. baking powder
- 1 c. plus 2 Tbsp. milk
- 1 egg
- 4 Tbsp. oil
Directions

1Sift together the first 5 ingredients; add the milk, egg and oil.

2Beat together for 2 minutes.

3Place 2 teaspoons of oil in an 8-inch cake pan. Pour in batter.

4The oil will rise around it, greasing pan evenly.

5Bake at 425° for 25 minutes.

6Use a larger pan if you wish a crisper and thinner cornbread.

7Shorten baking time.
