- 1 c. sugar
- 1 c. all-purpose flour
- 2 eggs
- 2 Tbsp. all-purpose flour
- 3 tsp. lemon zest
- 3 Tbsp. lemon juice
- 1/4 tsp. baking powder
- powdered sugar
Directions

1Beat butter on high speed for 30 to 45 seconds. Add 1/4 cup sugar and beat until well mixed. Beat in 1 cup of flour until crumbly. press mixture in greased 8 x 8 x 2-inch baking pan. Bake at 325° for 14 to 18 minutes (until golden). Beat eggs, 3/4 cup sugar, 2 tablespoons flour, lemon zest, lemon juice and baking powder for 2 minutes. Pour over crust. Bake at 325° for 22 to 25 minutes until golden around edges and center is set. Cool on wire rack. Sift powdered sugar and cut into 20 bars.
