- 1 cup cornmeal
- 1 cup whole wheat flour or 1 cup white flour
- 14 cup brown sugar or 14 cup white sugar
- 2 teaspoons baking powder
- 14 teaspoon salt
- 1 cup soymilk or 1 cup dairy milk
- 14 cup vegetable oil
- 1 egg
Directions

1Preheat oven to 425F.

2Lightly oil a 9 x 6-inch pan with vegetable oil.

3In a large bowl combine cornmeal, flour, sugar, baking powder and salt.

4In a medium bowl, combine milk, vegetable oil, and egg.

5Pour liquid mixture into dry ingredients and stir just to combine.

6Do not over mix.

7Pour mix into pan.

8Bake 15 to 20 minutes until knife inserted in center comes out clean.
