Ingredients
- giblets from chicken
- 3/4 c. butter
- 1/4 c. onion, chopped
- 3 c. crumbled cornbread
- 1 Tbsp. poultry seasoning
- 1 tsp. sage (optional)
- 2 c. water
- 1 c. celery, chopped
- 4 c. toasted bread crumbs
- 2 tsp. salt
- 1/2 tsp. pepper
Directions

1Combine giblets in water in saucepan.

2Cook until giblets are no longer pink.

3Reserve two cups broth (set aside giblets), chop and add to gravy.

4Melt butter in heavy skillet.

5Saute celery and onion until transparent.

6Add bread crumbs and cornbread seasonings.

7Pour reserved broth over ingredients and stir to blend.

8Preheat oven to 350°.

9Cook, covered with aluminum foil, for 20 minutes.

10Remove foil and bake 10 minutes, or can be stuffed in cavity of chicken or turkey and roast as desired.
