  • 1 medium onion, diced
  • 1 lb. lean ground beef
  • 1 can tomato sauce
  • 2 cans mixed vegetables (frozen or canned)
  • 1 Jiffy cornbread mix

Directions

    Brown ground beef.

    Cook onion until tender.

    Drain off excess fat.

    Add tomato sauce and vegetables to meat mixture and cook for a few minutes.

    Mix cornbread according to package directions. Place meat and vegetables in casserole dish.

    Spread cornbread on top and bake at 375° until cornbread is done.
