- 1 medium onion, diced
- 1 lb. lean ground beef
- 1 can tomato sauce
- 2 cans mixed vegetables (frozen or canned)
- 1 Jiffy cornbread mix
Directions

1Brown ground beef.

2Cook onion until tender.

3Drain off excess fat.

4Add tomato sauce and vegetables to meat mixture and cook for a few minutes.

5Mix cornbread according to package directions. Place meat and vegetables in casserole dish.

6Spread cornbread on top and bake at 375° until cornbread is done.
