- 8 c. cornbread (made with yellow meal)
- 8 c. stale bread cubes
- 1 c. chopped onion
- 2 c. chopped celery
- 1/2 c. butter or oleo, softened
- 2 tsp. salt
- 1 tsp. black pepper
- 1 tsp. poultry seasoning
- 4 eggs, beaten
- 6 hard-boiled eggs, chopped
- 4 c. chicken stock
Directions

1Cook celery and onion in margarine until golden around edge. Cook bread cubes until golden brown with oleo.

2Add seasoning.

3Add crumbled cornbread to this.

4Add beaten eggs to stock and pour over all.

5Use more stock if too dry.

6Lastly, add eggs that have been chopped.

7Bake on 400° until golden brown around edges.
