Cornbread Dressing

  • 4 c. soft biscuits or bread crumbs
  • 4 c. soft cornbread crumbs
  • 1/2 c. chopped onion
  • 1 c. diced celery
  • 1/2 c. cold butter, diced
  • 1 to 1 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. sage
  • 1/4 c. chicken or turkey broth or water
  • 2 eggs, slightly beaten

    In a large bowl, combine biscuit and cornbread crumbs, onion, celery and butter; mix well.

    Season with salt and pepper.

    Add sage (rub spice gently between fingers to enhance flavor).

    Add chicken or turkey broth and eggs; mix lightly.

    Use mixture for stuffing poultry or a crown roast, or bake in a lightly greased baking pan, covered, at 350° for about 30 minutes.
