- 1/2 c. cornmeal
- 2 tsp. baking powder
- 1/2 c. milk
- 2 Tbsp. sugar (optional)
- 1/2 tsp. salt
- 1 egg, slightly beaten
- 2 Tbsp. shortening
Directions

1Preheat oven to 425°.

2Mix dry ingredients in a small bowl; add egg, milk and 1 tablespoon melted shortening.

3Mix together until smooth.

4Pour into hot iron skillet containing the other 1 tablespoon shortening.

5Bake at 425° for 20 minutes.
