- 8 c. cornmeal or 7 c. cornmeal and 1 c. flour
- 3 Tbsp. baking powder
- 4 tsp. salt
- 1/2 c. sugar (if desired)
- 1/2 c. shortening
Directions

1Sift and measure cornmeal and flour.

2Add baking powder, salt and sugar to cornmeal mixture and sift together.

3Cut in the shortening until it is fine grained.

4Store in a cool place.

5If you use buttermilk, add 2 teaspoons soda to this recipe and use only half as much of the baking powder.

6If you want to cook the cornbread in a waffle iron, use 1 cup of the shortening instead of 1/2 cup.

7To use, add 1 egg and 1/2 cup of milk for each cup of the mix.

8Stir in the small mixing bowl until well blended.

9Pour into well-greased muffin tins or a 9 x 9-inch pan.

10Bake at 400° for 25 to 30 minutes.
