- 1 (8 oz.) box Jiffy cornbread mix
- 1 medium bell pepper, chopped
- 1 medium onion, chopped
- 3 to 5 tomatoes, peeled and chopped
- 1 Tbsp. sugar
- 1 lb. bacon, fried, drained and crumbled
- 1 1/2 to 2 c. mayonnaise
- 1/2 c. salad cube pickle
Directions

1Make cornbread according to directions.

2Crumble 1/2 in bottom of baking pan or dish.

3Layer vegetables and bacon in order given, saving enough bacon for top.

4Combine mayonnaise, sugar and salad pickle.

5Spread over vegetables and bacon layer.

6Add remaining cornbread on top.

7Chill until served.
