Ingredients

  • 1- 8 1/2 oz. corn muffin mix
  • 1 lb. mild sausage
  • 1/3 c. (approximately) bread and butter pickles
  • 2 medium or large tomatoes
  • 2 medium or large onions
  • 1/2 large green pepper
  • 1/2 cup (heaping) mayonnaise
  • 2 Tbsp. pickle juice

Directions

    Mix and bake cornbread according to directions.

    Remove from oven, cool and crumble.

    Meanwhile cook sausage, crumbling as it cooks.

    Drain off grease, wash with warm water and finish draining on paper towel.

    Chop pickles, tomatoes, onions and pepper.

    Add mayonnaise and pickle juice.

    Stir in sausage and cornmeal.
