- 1- 8 1/2 oz. corn muffin mix
- 1 lb. mild sausage
- 1/3 c. (approximately) bread and butter pickles
- 2 medium or large tomatoes
- 2 medium or large onions
- 1/2 large green pepper
- 1/2 cup (heaping) mayonnaise
- 2 Tbsp. pickle juice
Directions

1Mix and bake cornbread according to directions.

2Remove from oven, cool and crumble.

3Meanwhile cook sausage, crumbling as it cooks.

4Drain off grease, wash with warm water and finish draining on paper towel.

5Chop pickles, tomatoes, onions and pepper.

6Add mayonnaise and pickle juice.

7Stir in sausage and cornmeal.
