Cornbread Stuffed Peppers

- 1 pan baked cornbread
- 1 onion, diced
- 1 (16 oz.) can corn, drained
- 1 (16 oz.) can stewed tomatoes, chopped
- 1 (16 oz.) can LeSueur peas, drained
- 1 to 2 lb. ham, cut into 1-inch squares
- 6 large peppers, parboiled
- 6 strips bacon
Directions

1Preheat oven to 300°.

2Crumble cornbread into a large mixing bowl.

3Add corn, tomatoes, onions and peas.

4Mix until evenly moist.

5Add ham and mix thoroughly.

6Stuff mixture into bell peppers.

7Place in large glass baking dish. Spoon excess stuffing around peppers and place 1 strip bacon on top of each pepper. Bake 40 minutes.
