  • 4 lb. corned beef brisket
  • 1 1/2 oz. dry onion soup mix
  • 4 peppercorns
  • 3 or 4 cloves garlic, minced
  • 1 bay leaf
  • 3 c. water
  • 6 medium potatoes, pared and quartered
  • 6 medium carrots, pared and cut in 1 1/2-inch pieces
  • 1/2 c. celery, cut in 1-inch pieces
  • 1 medium head cabbage, cut in wedges

Directions

    Put meat into a deep saucepot or Dutch oven.

    Add soup mix, peppercorns, garlic, bay leaf and water.

    Cover; bring to boiling and simmer 3 1/2 hours.

    Add vegetables, placing cabbage on top of meat.

    Cover and cook 1 hour, or until tender.
