Ingredients

  • 4 lb. corned beef
  • 1 large sliced carrot
  • 2 large onions, one stuck with 4 cloves
  • 1 large cabbage
  • 1 tsp. dry mustard powder
  • sprig of thyme and parsley
  • pepper
  • cold water

Directions

    Put meat in large saucepan with all ingredients, except the cabbage.

    Cover with cold water and bring to a boil, then skim off any scum.

    Cover and simmer for 3/4 hour.

    Put in cabbage, trimmed and quartered.

    Cook for 30 minutes to the pound and serve.
