Corned Beef Casserole

  • 3 c. sliced potatoes
  • 1 (12 oz.) can corned beef
  • 1/3 c. water
  • salt and pepper to taste
  • 1 can cream of mushroom soup

Directions

    Spread potatoes evenly over bottom of well-greased baking dish.

    Sprinkle with salt and pepper.

    Break corned beef into fairly large pieces.

    Spread over potatoes.

    Combine soup and water; blend thoroughly and heat in saucepan over low heat to boiling point.

    Stir constantly.

    Pour over meat and potatoes. Cover and bake at 325° for 1 hour and 30 minutes, or until potatoes are tender.

    Serve while piping hot.
