- 1 (3 lb.) corned beef brisket
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 bay leaves
- 6 small potatoes, pared
- 6 small carrots, pared
- 6 cabbage wedges (1 medium head)
Directions

1Place corned beef in Dutch oven barely covered with hot water. Add onion, garlic and bay leaves.

2Cover, simmer about 3 hours or until tender.

3Remove meat from liquid and add potatoes and carrots.

4Cover and bring to a boil.

5Cook 10 minutes.

6Add cabbage and cook 20 minutes.

7Carve meat across the grain, making thin slices.

8Serves 6.
