Ingredients
- 1 (12 oz.) can corned beef
- 3/4 c. uncooked rice
- 1 (No. 2) can tomatoes
- 1 medium onion, sliced
- 1 green pepper (optional), coarsely cut
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 c. water
Directions

1In large skillet, break corned beef into pieces.

2Add rice, tomatoes, onion, green pepper, salt, pepper and water.

3Place over high heat.

4Bring to a vigorous boil.

5Turn heat down.

6Cover and allow to cook slowly for 30 minutes or until rice is tender. Serve from skillet if desired.

7Makes 8 servings.
