Corned Beef Hash

Ingredients
- 3 -4 lbs corned beef (uncooked)
- 2 -5 baking potatoes, cut into 1/2 inch dice (about 2 pounds)
- 2 tablespoons olive oil
- 1 medium onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 4 garlic cloves, minced
- salt & pepper
- 1 (15 ounce) can tomato sauce
- 1 tablespoon hot sauce (such as Tabasco)
Directions

1Cook corned beef according to instructions on package.

2This will take 3-4 hours.

3Remove beef from cooking liquid, reserving liquid.

4When beef is cool, cut into 1/2 inch dice.

5When cooking liquid has cooled to lukewarm, add potatoes & soak for about 15 minutes to soften.

6Heat oil in a large nonstick skillet.

7Remove potatoes from liquid with a slotted spoon & add to skillet.

8Cook over medium heat until softened (about 10 minutes).

9Note: stir frequently throughout entire cooking process to prevent sticking.

10Add onion and bell pepper and cook until softened (about 5 minutes).

11Add beef and cook until browned (about 5 minutes).

12Add garlic and salt & pepper to taste.

13Cook for another minute or so until garlic is fragrant.

14Add tomato sauce and hot sauce.

15Simmer over medium low heat until sauce thickens (about 10 minutes).

16Spoon hash onto plates and serve with fried eggs on top.
