- 5 to 6 lb. roast (beef or venison)
- 1/4 tsp. saltpeter, dissolved in 1/4 c. warm water
- 2 Tbsp. sugar
- 2 cloves minced garlic
- 2 tsp. paprika
- 1 Tbsp. pickling spice
- 3/4 c. salt
- 2 qt. water
Directions

1Combine last 6 ingredients and then add saltpeter mixture.

2Put meat in container (crock or slow cooker).

3Pour marinade over meat. Weight down with plate.

4Leave for 3 weeks.

5Turn occasionally.

6If meat is bloody, rinse and then cook as a regular roast.

7Serve warm or cold.
