Corned Beef & Potato Hash

Ingredients

  • 4 cups water
  • 2 pieces celery diced
  • 1 beef bouillon cube
  • potatoes 6 med., diced
  • onion 1 lg., diced
  • 1 teaspoon salt optional
  • 1 can corned beef broken apart
  • 1/2 cup evaporated milk optional

Directions

    In large saucepan combine water, diced celery and beef bouillon cube.

    Let cook on top of stove while you prepare potatoes and onions.

    Add to mixture and cook until potatoes begin to soften.
  4. 4
    Stir in the broken apart corned beef and cook about 5 more minutes.

    If you want then stir in milk.

    Continue to stir until it again reaches a boiling point.

    Remove from heat and serve hot.

    Makes 6-8 servings.
