Corned Beef Stuffed Potatoes

  • 4 large baking potatoes
  • 1 1/2 c. minced, cooked corned beef
  • 1/4 c. butter
  • salt and pepper to taste
  • 1/8 c. minced parsley
  • 4 eggs

Directions

    Bake potatoes at 400° for 1 hour or until done.

    Cut slice off top of each potato.

    Scoop out centers.

    Leave 1/2-inch potato around walls.

    Mash potatoes.

    Stir in corned beef and butter. Add salt and pepper.

    Divide mixture among potatoes; reheat.
