Ingredients
- 4 large tortillas (or 8 small)
- 2 cups tomato sauce
- 1 lb ground beef
- 1 medium onion, chopped fine
- 12 cup mushroom, chopped fine
- 1 teaspoon butter
- 1 cup corn flakes, crushed
- 1 cup grated cheddar cheese
- 1 teaspoon spices (I use Mrs Dash)
Directions

1Melt butter in fry pan.

2Add onion and mushrooms and saute til tender.

3Add ground beef.

4Fry until browned.

5Add one cup of tomato sauce, 1 cup cornflakes and 1/2 cup shredded cheddar cheese.

6Mix well and heat.

7Place several tablespoons in the centre of a tortilla shell.

8Fold in ends, and wrap sides around.

9Place 1 cup tomato sauce in bottom of greased 9 x 13 pan.

10Place filled enchiladas (seam side down) on top of tomato sauce.

11Pour remaining meat mixture on top.

12Bake 15 minutes 350F.

13Add 1/2 cup shredded cheese to top and place back in oven until melted (approx 5 mins).
