- 1 Cornish hen per person
- 1 can cream of chicken soup
- 1 stick celery
- 1 onion
- salt and pepper
- dab of butter
Directions

1Preheat oven to 500° (to sear juices).

2Meanwhile, lay hens in pan.

3Salt and pepper each hen; rub in good.

4After oven is hot, put hens in oven for 30 minutes or until crispy golden brown. Meanwhile on stovetop, saute onions and celery in butter.

5Put can of cream of chicken and 1 can of water; heat until creamy and set aside until 30 minutes are up, then pour mixture over hens and cook for about another 20 minutes or until hens are done.

6Serve over rice (can substitute chicken if you don't have Cornish hens).
