- 2 Cornish hens (about 1 lb. each)
- 1 box long grain wild rice
- 1 medium onion, diced
- 2 celery stalks, chopped
- 1 bell pepper
- 1 Tbsp. butter or margarine
- 1 small can mushrooms
Directions

1Season hens inside and out with salt and pepper.

2Cook rice according to instructions on box.

3Melt butter/margarine in pan and add onion, celery, pepper and mushrooms.

4Cook until onion and celery are soft and brown.

5Mix well with rice and stuff the hens.

6Place breast on rack in shallow roasting pan and brush well with butter.

7Roast uncovered in 400° oven about 1 hour or until tender.
