- 2 Cornish hens
- 1/3 c. Dijon mustard
- 8 small potatoes
- 1/2 c. dry white wine or cooking wine
- dash of pepper
Directions

1In a rectangle baking dish, split 2 hens in half and place in baking dish, skin side up.

2Brush hens evenly with mustard. Season with pepper.

3Arrange potatoes, 4 on each side and prick each one 4 times.

4Pour wine over.

5Bake 1 hour at 350° uncovered.
