- 1 1/2 c. corn meal
- 3/4 c. flour
- 4 1/2 tsp. baking powder
- 1 tsp. salt
- 1/4 tsp. baking soda
- 2 Tbsp. sugar
- 1 egg
- 2 c. buttermilk
- 1/4 c. melted shortening
Directions

1Sift all dry ingredients.

2Beat egg.

3Add milk and pour all at once into dry ingredients.

4Beat with rotary beater until smooth. Stir in melted shortening.

5Bake on a very lightly greased, moderately hot griddle (300° to 325°).

6Bake until golden brown on under side and dry looking on top.

7Then turn and bake until other side is brown.

8Serve immediately with hot syrup.

9Makes 24 (4-inch) cakes.
